Mike,First I will apologize for not getting back to you..I plum forgot about this topic no excuses other then poor memory.
31.5" will work and give you headroom to work-that should be 3 50' cars and Geep size engines.
If I may..My son and I have the bench work for Slate Creek built and stored in his garage till I decide if I want to use a 8' folding table,wall brackets or legs.The table will give me room for my Tech 6,car cards and waybills plus a place to sit my coffee or pop.
By actual track layout I can use a full 36" piece of flex track but,Slate Creek is 10' long.
